The Perfect Lamb Cutlets,

For just over the last week my son and eldest granddaughter have been over from America. Last night my granddaughter and I had supper in the garden, one of her favourite foods is lamb.

Lamb especially kosher lamb is quite expensive so it's important to get it right when cooking lamb!

We had a simple menu, but she declared it was totally delicious! We had been to the theatre to matinee, and I wanted food that was easy to prepare because I knew I'd be tired after it day out.

So, Rosemary and garlic infused lamb cutlets, with air fried baby potatoes, and a big bowl of mixed leaf avocado, broccoli and red pepper salad went down a treat! Especially with my aspiring gourmet granddaughter.

It was so nice sitting in the garden watching the cat chasing imaginary butterflies and just sharing a simple yet delicious meal.

Garlic and rosemary lamb cutlets

Ingredients. Serve 2 or 3

6 lamb cutlets allow 2-3 lamb cutlets per person depending on the size

6 cloves of garlic

6 large sprigs of fresh Rosemary

black pepper ground

fresh sea salt ground

one dessert spoon of Rosemary infused oil

2 teaspoons of extra virgin olive oil

Method

it's very easy to overcook or undercook lamb, no doubt the best way to cook lamb

is on a BBQ, failing that in a griddle pan, but for us lesser mortals who might not possess either of those I have found this is the best way of getting excellent lamb cutlets or lamb chops

Put the lamb in a bowl or freezer bag, with Rosemary olive oil black pepper and garlic making sure that they're covered with the seasonings, place in the fridge a leave to marinate for at least four hours.

Heat the Rosemary oil in a very large nonstick frying pan preferably one that has a lid

Add the cutlets with the Rosemary and garlic to the pan leaving it on a high heat sear the meat until it is brown, and the fat is rendered down, this takes 3 minutes, then turn that cutlets over and repeat on the other side,

after 6 minutes the cutlet should be brown on the outside and quite pink inside, if you prefer your meat well done then cook for a further 2 minutes on each side.

Remove the cutlets and place on a serving platter with the garlic and Rosemary, sprinkle some sea salt across the top cover with silver foil and allow the meat to rest for six to 10 minutes before serving.

Although this is a very simple method of cooking lamb cutlets after trying many other ways this produces the best results,

Broccoli Avocado And Red Pepper Salad

Ingredients serve 4

One bag a fresh salad leaves washed and dried

4 stems of broccoli pre-cooked it lightly salted water chopped

Half a cup of cress

1 red pepper finely chopped

1 spring onions finely chopped

1avocado- chopped

Your favourite dressing, I used a balsamic vinegarette.

Method

Place all the ingredients in a bowl, add the vinegarette, mix well and serve

Air fryer new potatoes-

Before anything else, yes you can do this in the oven, but you won't get the same result as you get in an air fryer. The beauty of these potatoes is that you can prep them in the morning and then finish them off in the air fryer for six minutes before you eat.

Ingredients

Depending on the size of the new potatoes allow 3 or 5 per person

A teaspoon of sea salt

half a teaspoon of ground black pepper

half a teaspoon of garlic powder

half a teaspoon of paprika

Method

Boil the potatoes in the half the sea salt and water until they are 3/4 cooked, at this stage you can train them and put them in an airtight container in the fridge till later. If you're cooking them directly before the meal,

take the potatoes put them in an air fryer liner, make sure they are well covered with the black pepper garlic powder remaining salt and paprika,

place them in the air fryer on 180, and crisp them off for 6:00 to 8:00 minutes, There is no need to add oil to them, however if you're doing it in an oven you will need to cook them for 15 minutes and add a little olive oil to help them get crispy.

And there you have what my granddaughter declared was a perfect meal, we had ours with iced tea, but it would go very well with the glass of wine especially if you're sitting in the garden.
