I wanted to find a way of making roast chicken that didn\u2019t dry out when waiting for people to come home from Shul Friday night.<\/p>\n\n\n\n<p>This chicken dish is one of the simplest, and yet juiciest ways of making chicken, especially if you are cooking for a crowd. It is a method that delivers crowd a pleasing chicken.<\/p>\n\n\n\n<p>The trick is to use mainly legs and thighs also use a casserole or baking dish that has an efficient lid, it can be a Pyrex or enamel dish.<\/p>\n\n\n\n<p><strong>Ingredients serve 6.<\/strong><strong><\/strong><\/p>\n\n\n\n<p>6 chicken bottom portions, thighs, legs, oysters chose what you prefer.<\/p>\n\n\n\n<p>4 medium peeled and sliced.<\/p>\n\n\n\n<p>4-6 medium potatoes, well washed.<\/p>\n\n\n\n<p>2 thyme sprigs<\/p>\n\n\n\n<p>4 cloves of garlic peeled kept whole.<\/p>\n\n\n\n<p>1 teaspoon sea salt<\/p>\n\n\n\n<p>1 teaspoon black pepper<\/p>\n\n\n\n<p>1 teaspoon paprika<\/p>\n\n\n\n<p>1 litre good quality chicken stock<\/p>\n\n\n\n<p><strong>Method <\/strong><strong><\/strong><\/p>\n\n\n\n<p>Preheat your oven to 180 C, or 350 F gas mark 4.<\/p>\n\n\n\n<p>Place the sliced onion in the bottom of the casserole, cut the washed potatoes into 4 or 6 depending on their size and add to the onion along with the cloves of garlic.<\/p>\n\n\n\n<p>Rub salt pepper and paprika into the chicken and place the chicken into casserole on top of the onions, and garlic, any seasoning left over sprinkle over the dish. Add the thyme and chicken stock till it covers the onions and potatoes and comes halfway up the chicken.<\/p>\n\n\n\n<p>And place in the centre of the oven for 30 minutes, then turn the oven down to 160C 325 F gas mark 3 and cook for 15 more minutes.<\/p>\n\n\n\n<p>Serve hot with seasonal vegetables of your choice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Tewkesbury Chicken.
