A portion served with rice is under 440 calories<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients&nbsp;<\/strong><strong><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 tbsp sunflower or canola oil<strong><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 large onion finely chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4 cloves garlic, crushed<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2-inch ginger, finely grated<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tbsp ground coriander<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 tbsp ground turmeric<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 tbsp ground cumin<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/4 - 1\/2 tsp chili flakes (I use frozen Chili flakes )<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tin chopped tomatoes&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 tins chickpeas drained&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;120 ml vegetable stock&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">150 gm fresh or frozen chopped spinach<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 \u2013 teaspoon sea salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bd teaspoon ground black pepper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tsp garam masala or mild curry powder<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">100 ml cup half -fat coconut milk (50-100 ml)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bd cup of chopped fresh coriander leaves<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The Four Steps<\/strong><strong><\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li>Heat the oil in a large pan over a medium-high setting.
