This is also a great soup to eat in the sukkah. The other day my mother who loves good soup, and I were talking about the soups she used to make when I was a child, and this was an autumn and winter favorite of hers. It is one of those stick to your ribs soups that heats you up from inside, served with crusty bread it\u2019s a hearty meal in a bowl.<br><br>This is my mother\u2019s recipe, the one I grew up with, slightly tweaked to bring it up to date.She always used tinned beans for speed, but you can use dried beans and soak them over night before cooking. She also cooked hers for hours in a large pot on the stove, but this converts to a slow cooker extremely well.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><br>I can of butter beans drained.<br>\u00bd cup of pearl barley<br>I can of chickpeas or kidney beans drained.<br>1 kilo of beef shin<br>I marrow bone, if possible, not easy to get nowadays<br>3 celery sticks chopped.<br>2 onions peeled and chopped.<br>4 carrots peeled and chopped.<br>I small swede peeled and diced.<br>2 bay leaves<br>\u00bd teaspoon mixed dried herbs<br>1 sprig fresh thyme<br>I teaspoon salt<br>1 teaspoon black pepper<br>1.5 liters beef, chicken, or vegetable stock.<br>1 cup water<br>\u00bd a desert spoon tomato paste, or one can chopped tomatoes optional (but my mother<br>used them)<br>\u00bc cup fresh parsley<br><br><strong>Method<\/strong><br><br>Place all the ingredients (except the parsley ) in a large slow cooker, stir it and cover with the stock and water.to ensure everything is covered.<br>Place the slow cooker on auto, and go about your day, return home after 8-10 hours and your soup is done! Taste it and adjust the seasoning, I<em> need more salt, but others may not.<\/em> <br>Sprinkle in the parsley &amp;serve with crusty bread.
