(by hand)<br>Here is her\u00a0recipe\u00a0 \u00a0to serve 4 hungry grandchildren<br>Ingredients<br>1 kilo potatoes, peeled<br>2 large onions peeled and grated<br>1 large egg checked &amp; beaten\u00a0<br>25 grams \/ 1 oz\/ 1-2 table spoons fine matzo meal.(you can use Gluten free flour flour)<br>1 -2 Teaspoons salt.<br>\u00bd teaspoon black pepper<br>\u00bc teaspoon baking powder<br>Plus, spare salt for sprinkling<br>\u00bd Litre Vegetable\u00a0oil for frying<\/p>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Peel the potatoes and put them in cold water for at least 10 minutes.<\/li>\n\n\n\n<li>Peel and grate the onion, place in large bowl.<\/li>\n\n\n\n<li>Grate the potatoes, squeeze out excess liquid, Grandma used a medium blade on<br>a hand grater\u00a0you can use a food processor on a medium grating blade, butt<br>Bubbah would say that\u2019s cheating!<\/li>\n\n\n\n<li>Put the oil on into a large frying pan and heat till medium.<\/li>\n\n\n\n<li>mix the grated\u00a0potatoes\u00a0&amp; onion with the egg, salt, pepper, baking powder and<br>matzo meal or gluten free flour l mix well.<\/li>\n\n\n\n<li>Spoon the latke mix into the oil, making sure they have room to spread (normally<br>we would do one trial one that was cooks perks !!)<\/li>\n\n\n\n<li>Fry the latkes 4-5 minutes each side. They need to be golden brown, but the potato<br>needs to be cooked inside.<\/li>\n\n\n\n<li>\u00a0Lift out the latkes onto kitchen paper to drain, then sprinkle a little salt on top and<br>serve.<\/li>\n<\/ol>\n\n\n\n<p>This recipe is a tribute to my grandmother, who spread light to everyone she met.
