Who was born on the 1st of March, (which in Wales Saint David's day).<\/p>\n\n\n\n<p>My mother loved. the fact. that usually daffodils would be in abundance, furthermore as leaks, are the symbolic to Wales she would make this soup around her birthday. quite often when I was a child. Traditionally, in Scotland it was normal to put prunes In this soup, however My mother always omitted them, she did add oats which added a creaminess body to the soup.<\/p>\n\n\n\n<p><strong>Ingredients. For 6 to 8 portions. This soup freezes well.<\/strong><strong><\/strong><\/p>\n\n\n\n<p>1.5 kilogrammes of chicken. &nbsp;Use a whole chicken or chicken thighs or legs.<\/p>\n\n\n\n<p>2 litres chicken stock.<\/p>\n\n\n\n<p>2 Bay leaves.<\/p>\n\n\n\n<p>1 medium onion cut in 4.<\/p>\n\n\n\n<p>4 leeks, Cut lengthways., washed thoroughly under running cold water then then sliced thinly.<\/p>\n\n\n\n<p>One teaspoon of good quality sea salt.<\/p>\n\n\n\n<p>Half a teaspoon of ground black pepper.<\/p>\n\n\n\n<p>One clove of garlic.<\/p>\n\n\n\n<p>One dessert spoon of gluten free porridge oats. or any quick porridge oats<\/p>\n\n\n\n<p>Half a cup of chopped parsley.<\/p>\n\n\n\n<p><strong>Method<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Wash the chicken under cold water and place in a large pot that has a tight-fitting lid.<\/p>\n\n\n\n<p>Add the onion, bay leaves and garlic .to the pot cover with the stock.<\/p>\n\n\n\n<p>Bring the chicken to the boil then simmer. for approximately an hour and a quarter, or until the chicken is cooked through. (You can assess that by. making sure there's no trace of pink between the drumstick and the thigh if its not cooked enough cook a further 20 minutes.<\/p>\n\n\n\n<p>Remove the chicken from the pot with a slotted spoon placing it on a large plate to cool a bit. return any juice back into the saucepan.<\/p>\n\n\n\n<p>Removet the meat from the chicken bones taking of the skin chop the meat into bite size pieces return it into the saucepan.<\/p>\n\n\n\n<p>&nbsp;Add the leaks and the parsley to the soup along with the chicken meat bring to the boil &amp; simmer 20 minutes or until the leaks are soft.<\/p>\n\n\n\n<p>Add the Porridge oats by sprinkling them across the top of the soup stir them in well and cook for a further 5 minutes.<\/p>\n\n\n\n<p>Heat the soup serve piping hot with crusty bread, and a glass malt whiskey! it makes a wonderful meal in<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cock-a-leekie Soup This is a traditional Scottish soup. that is warm and comforting, It's also a nod to my mother.
