During the warmer months, efficient and lighter recipes are ideal, such as orange chicken. While I once disliked duck served with orange, I have since found that citrus flavours complement chicken exceptionally well. This straightforward dish can be prepared in 45 minutes and is suitable both for family dinners and for entertaining guests.<\/p>\n\n\n\n<p>Ingredients (serves 6)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.2 kg chicken thigh&nbsp;fillets<\/li>\n\n\n\n<li>80 ml (1\/3 cup) fresh orange juice<\/li>\n\n\n\n<li>1 tablespoon honey<\/li>\n\n\n\n<li>2 teaspoons olive oil<\/li>\n\n\n\n<li>2 garlic cloves, crushed<\/li>\n\n\n\n<li>2 teaspoons ground coriander<\/li>\n\n\n\n<li>1 teaspoon ground cumin<\/li>\n\n\n\n<li>1 teaspoon turmeric<\/li>\n\n\n\n<li>1 orange, thinly sliced<\/li>\n\n\n\n<li>Ground black pepper<\/li>\n\n\n\n<li>Sea salt, freshly ground<\/li>\n\n\n\n<li>2 spring onions (for serving)<\/li>\n\n\n\n<li>3 shallots, chopped<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Preheat the oven to 180\u00b0C (350\u00b0F), gas mark 4.<\/li>\n\n\n\n<li>Thinly slice the shallots and oranges, then arrange them alternately in the base of an ovenproof dish.<\/li>\n\n\n\n<li>Place the crushed garlic and all spices into a plastic food bag, add the chicken, and shake until evenly coated.<\/li>\n\n\n\n<li>Mix the honey, orange juice, and olive oil thoroughly.<\/li>\n\n\n\n<li>Layer the chicken thighs on top of the oranges and shallots, season with salt and pepper, then pour over the orange juice, honey, and olive oil mixture.<\/li>\n\n\n\n<li>Bake uncovered for 50 minutes, ensuring the meat reaches an internal temperature of 75\u2013195\u00b0F (79\u201390\u00b0C) as measured by a meat thermometer.<\/li>\n\n\n\n<li>Allow the dish to rest covered with foil for five minutes before serving.
