Hamburger Soup a very American brew

Hamburger Soup serves 6
I hadn't heard of hamburger soup until visiting my son in Kansas in the Midwest of America where this soup is a one bowl meal solution for all the farming community. It is called hamburger soup as in the US minced beef is called hamburger meat!! The recipe originates in Texas where meat is obligatory at nearly every meal I'm surprised they don't have hamburger flavoured ice cream!
This soup takes 10 minutes to prepare and 15 -20 minutes to cook it is nutritious delicious and a great hit with my grandchildren. Whenever this soup is made however the big the pot there never is enough as my grandchildren come back for more and more and even more!
Ingredients
1lb ground beef
1 large onion finely chopped.
3 sticks of celery finely chopped.
4 cloves of garlic finely chopped.
3 carrots peeled and diced finally
4 read potatoes, peeled and cut into chunks put into cold water
14 oz can of tinned tomatoes chopped or not chopped
1 red pepper and 1 green or orange pepper washed and chopped and deseeded.
1 medium can of sweet corn
I medium can of kidney beans
half a teaspoon of smoked paprika
half a teaspoon of regular paprika
1/4 a teaspoon of cayenne pepper
1.5 litres of beef or vegetable stock either home made or make with a cube.
half a cup of chopped parsley
half a cup of chopped coriander optional
½ tablespoon vegetable oil.
squeeze of half a lemon
Black pepper and salt to taste.
Method
Take a thick bottom pan, which has a well-fitting lid place it over medium heat and add the vegetable oil, when the oil is hot add your onions carrots and celery, turn down the heat and so T cook them until the onions are transparent and the carrots slightly tender.
Add your meat and brown it over then at your garlic smoked paprika regular paprika cayenne pepper and salt and pepper, plus the chopped Peppers; stir well and cook tell them eat is no longer pink.
Add your tin tomatoes your stock and the can of sweet corn, kidney beans plus your potato chunks.
If you like things with a slight kick then add the juice of quarter of a lemon as this brings out the flavours of all the herbs.
Stir in your parsley and coriander. Place a lid on your pan and cook for 15 to 20 minutes. Season to taste
This is ideal served with crunchy garlic bread or sourdough bread for meal in a bowl.
