A delicious desert from Kosher Corner
Unfortunately Corinne Rachelle is not so well at the moment, so we have borrowed from Kosher Corner a recipe that they are publishing today. Interestingly if you follow the Potato Starch version, it is also suitable for Pesach but Apples and Rosh Hashana go together so we are using it now.
This is a recipe based in USA, so you will want to use British products where the US ones are not available.
By the way, Corinne Rachelle has some excellent recipes which will be coming over the next weeks ready for the Yomtovim.

Ingredients
Filling
9 Granny Smith apples, peeled
1 (12-ounce/340-gram) jar Tuscanini Apricot Preserves
Gefen Cinnamon
Batter
1/2 cup sugar
1/2 cup Manischewitz Potato Starch (can use an equal amount of flour to make this kugel year-round)
3 eggs
3/4 cup oil
1 teaspoon Haddar Baking Powder
2 tablespoons Gefen Vanilla Sugar
Directions Make the Kugel
1 Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
2 Slice apples very thinly and place in a 9- x 13-inch pan.
3 Spread apricot preserves over apples. (You may need to first heat preserves to soften.) Sprinkle generously with cinnamon.
4 Mix batter ingredients well by hand to form batter. Spread over preserves.
5 Bake, uncovered, one hour and 15 minutes, or until golden brown.
