I learnt to cook at the knee of my father's mother, she was an exceptionally good traditional cook, She taught me how to make Lockshen, Victoria Sponge, Baked egg custard, Yorkshire puddings, Cinnamon balls, Pate, all before she died when I was twelve.
The recipes my grandmother used, were until of late considered somewhat old fashioned However have recently become avant-garde, The return to traditional. British food. Has become a movement, And it made me laugh. To think the bubble and squeak something delicious that my grandmother would make from leftovers, Is according to social media, The newest breakfast or lunch dish, to be served in trendy restaurants. with a poached egg on top.
Bubble and Squeak dates back to the 19th century, It is a dish made with potatoes and green vegetables like cabbage or sprouts mashed together and fried, the name comes. from the sound it makes when cooking.
Ingredients. To serve 2.
Approximately 350 g /11 ounces of leftover cold boiled potatoes. (mashed)
One large. onion. (chopped.}
Approximately the same amount of leftover green vegetables such as spinach, brussels sprouts, cabbage, leeks. or a mixture out of all of them.
Half a teaspoon. Of. Dried thyme or Rosemary
A teaspoon of ground black pepper.
3/4 of a teaspoon of good quality sea salt.
2 spring onions finely chopped.
2 tablespoons of vegetable oil for frying.
Method.
Heat the oil in a heavy bottom frying pan.
Sote the onions until they are transparent.
Meanwhile. Place the potatoes. And the green vegetables in a bowl, Mix them well together, season them and add the mixed herbs, Plus the spring onions.
Add in the fried onions. I'm mixed together again.
Place the potato and the vegetable mixture. Into the frying pan. Pressing it down into a circle.
Fry it on a low to medium. Heat. Row about 10 to 15 minutes, then carefully. Flip it over and fry the other side.,
It takes between 20 to 30 minutes. To make a bubble and squeak., You can choose whether to do it as one whole circle or individual patties.
Traditionally, Bubble and Squeak was served with the sliced cold meats leftover from the Sunday Roast. Nowadays It can be served on its own or with sweet chilli sauce.
Its excellent with a poached eggs placed on top of each portion. & roasted vine tomatoes
