Slow Cooked Coca Cola Beef serve 4

Cooking time 7 hours in slow cooker
The first time I heard of Coca Cola being used when cooking meat or poultry was not so impressed, however this slow cooked beef is one of the simplest recipes ever, and the results are quite amazing. It’s a dish you could put on in the morning if you are going to have a busy day and come home a ready prepared supper .
Ingredients
Around I kilo joint of Top Rib ( I use Gilberts Top Rib available sometimes in Waitrose nearly always from Ocado )
2 stalks of celery finely chopped.
2 carrots pealed finely chopped.
1 onion finely chopped.
1 can Coca Cola
1 can chopped tomatoes.
2 cloves garlic
2 bay leaves
1 desert spoon tomato puree
568 mL beef stock
1 teaspoon smoked paprika.
½ cup fresh parsley
½ teaspoon pepper
½ teaspoon sea salt
1 teaspoon brown sugar
Line a slow cooker with a liner, and place the chopped vegetables, garlic, in add you top rib. Add all the other ingredients, mix , and ensure your meat is covered .
Place a lid on your slow cook and cook it on auto for seven hours.
Serve with mashed potatoes, and vegetables. I guarantee you will be surprised how delicious and tender the top rib is.
