
Food for the 9 days Part 1
The first nine days of the month of Av, and also the morning of the tenth,1 are days of acute mourning for the destruction of the first and second Holy Temples. It is customary during that time to refrain from eating meat and drinking wine unless on Shabbat.
This year the nine days corresponds with Evening of Sunday, 4 Aug 2024 – to the evening of Tuesday, 13 Aug 2024 the last day being a fast day Tisha B'Av
There's no need to have boring food at this time, below is dish that will enhance your nine-day menus.
Pasta With Broad Beans And Feta serves 4.
Ingredients
400 grams broad beans you can use fresh shelled or frozen broad beans.
One red onion finely chopped.
The zest and juice of 1 1/2 lemons
½ cup a freshly chopped dill
3 cloves garlic chopped.
2 tablespoons of olive oil
100 grams a feta,
300 grams of your favourite pasta
half a teaspoon of freshly ground black pepper.
half a teaspoon of cooking salt
Please note if you want to make this gluten free and /or dairy free choose a gluten free pasta, and a vegan feta.
Method
Take a large saucepan, fill it 3/4 of the way up, put in the cooking salt bring to the boil add the broad beans I'm blanche them for about 3:00 to 4:00 minutes depending on the texture that you like, remove them from the boiling water with a slotted spoon and place them in a bowl of chilled water to stop them cooking any further.
Cook your pasta in this water according to the directions on the packet.
Using either a large frying pan with a lid or a heavy bottom pan add the oil and when it's hot cooked the chopped red onion, and garlic together until their translucence sent but not caramelised this will take about 5 minutes on a medium heat.
add the broad beans to the onions,
when the pasta is cooked drain it but reserve about 120 millilitres of the pasta water add the drain pasta to your onions and beans then add the pasta water lemon juice and zest
mix it and crumbling most of the feta and most of the deal start season with black pepper and transfer to a serving dish will you add the remaining feta and sprinkle the remaining dill on top.
