Summer Salads

When the weather is hot, I often find I do not feel especially hungry. Even so, it is still important to stay hydrated and keep your protein intake up.

One of the easiest ways to do that is with fresh, colourful summer salads that are quick to prepare and satisfying to eat.

My Summer Salad Staples

At this time of year, I like to keep my fridge and kitchen stocked with simple ingredients that make it easy to throw together a nourishing salad.

  • Different varieties of lettuce
  • Red onions or spring onions
  • Good tomatoes, such as Isle of Wight tomatoes or tomatoes on the vine
  • Cucumber
  • Seeds for topping
  • Chickpeas to roast and add for extra protein
  • Beetroot and avocados

For dressings, I always make sure I have good-quality extra virgin olive oil, lemons or apple cider vinegar, garlic, salt, pepper, and fresh herbs.

Below are some simple summer salad ideas that do not require turning on the cooker. They can be made quickly, enjoyed outside, packed for the beach, or taken on a picnic. Best of all, they are easy to transport.

Fresh & Fruity Salads

  • Watermelon & Feta Salad: Cubed watermelon mixed with salty feta, mint, and a drizzle of lime or balsamic.
  • Tomato, Peach & Burrata: A sweet-and-savoury combination of ripe tomatoes, juicy peaches, and creamy burrata.
  • Strawberry Spinach Salad: Baby spinach, fresh berries, goat’s cheese, and pecans tossed in a light poppyseed or balsamic dressing.

Pasta Salads

  • Caprese Pasta Salad: Made with cherry tomatoes, fresh mozzarella pearls, and basil, tossed in a balsamic glaze.
  • Tortellini Pasta Salad: Cheesy tortellini mixed with summer squash, peppers, and an Italian vinaigrette.

Veggie-Packed Sides

  • Greek Salad: Cucumbers, tomatoes, red onion, Kalamata olives, and generous pieces of feta cheese.
  • Summer Corn Salad: Crisp sweet corn combined with diced peppers, herbs, and a light dressing.
  • Broccoli Salad: Raw broccoli tossed with a creamy dressing, shredded cheddar, and dried cranberries.
