Mango Salmon

During the Nine Days, the period leading up to Tisha B’Av, many people avoid eating meat except on Shabbat. Tisha B’Av is the saddest day in the Jewish calendar, an annual day of mourning that commemorates several major calamities in Jewish history, most notably the destruction of both the First and Second Temples in Jerusalem.

In the past, salmon was considered a luxury, but nowadays it is one of the more reasonably priced fish on the market.

Last Friday, in the stifling heat, I really did not want to put on my oven. If it had to go on at all, it was only going to be for the shortest possible time. I had already abandoned the idea of making chicken and decided that salmon and salad was the way forward.

This recipe is unusual, incredibly quick, and works beautifully in an air fryer. If you do not have one, you can use an oven instead. The result is a unique, sweet-savoury flavour that is excellent served with rice and salad.

Ingredients

Serves: 4

  • 4 portions of salmon, preferably from the middle rather than the tail
  • 2 garlic cloves, crushed
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 dessert spoon extra virgin olive oil
  • ½ cup good-quality mango chutney

Method

  1. If using an oven, preheat it to 200°C.
  2. Wash the salmon in cold water, pat it dry with kitchen towel, and place it in an ovenproof dish.
  3. If using an air fryer, place the salmon in a dish that fits inside the air fryer.
  4. Season the salmon with salt, pepper, and crushed garlic.
  5. Mix the olive oil with the mango chutney, then brush the mixture liberally over the salmon. I usually place the salmon skin-side up so that the skin becomes crisp.
  6. Pour any remaining mango chutney and olive oil mixture over the salmon before cooking.

Cooking Instructions

Oven method: Cook the salmon for 10 minutes, then turn off the oven and leave the salmon inside for a further 4 minutes.

Air fryer method: Use the fish setting and cook for 11 minutes. Remove the salmon from the air fryer and let it rest for about 5 minutes before serving.
